Ok so this post is by fan request. Yes someone saw a picture of this beautiful creation on my facebook and asked me for the recipe — as I didn’t really have a specific recipe I could point to, I thought hmm I guess I’ll write it up and put it on the blog. This one is for you Ten!
Strawberry Goat Cheese Bruschetta
- Strawberries, Sliced Thin
- Crumbled Goat Cheese (I love Trader Joes!)
- Balsamic Vinegar
- Spray Butter/Olive Oil
- First I start off by slicing all of my bread into about 1/4 inch thick slices. I use a little spray butter on each side and I pop it on a tray in the oven at say 350 for about 8 minutes (flipping about 4 minutes in). But check on the bread — you want the bread to be a bit toasty but not hard and crunchy.
- Wash and slice your strawberries, as thin as you can get them.
- Once your bread is done, take the goat cheese and spread on the warm baguette.
- Top with the Strawberries, then drizzle a bit of honey and a bit of balsamic (not too much that the bread would get soggy).
- If you have extra goat cheese left sprinkle that on top too (you can never have too much goat cheese!)
Serve and enjoy!
Ok, this is one of my favorite breakfast recipes. I will make a good batch of this and cut it into slices to eat throughout the week. You can adjust this with whatever fruit you like, but here is the way I make mine. I took the original pinterest recipe and slightly adapted it.
Fruity Oatmeal Bake
- 2 cups old fashioned rolled oats
- 1/3 cup packed light brown sugar
- 1 teaspoon baking powder
- 1 teaspoon Cinnamon
- 1/2 cup sliced almonds
- 1/2 cup of strawberries (sliced)
- 1/2 cup of raspberries (sliced)
- 1/3 cup semi-sweet chocolate chips
- 2 cups non fat milk
- 3 tablespoons butter, melted
- 2 teaspoons vanilla extract
- 1 banana sliced
Heat oven to 375 degrees . Spray your baking dish generously with non-cook spray!
In a large bowl, mix together the oats, sugar, baking powder, cinnamon and half of the chocolate, raspberries, strawberries, and almonds. Add to baking dish. Then arrange the remaining chocolate, raspberries, strawberries, and almonds as well as the banana slices on the top.
In another large bowl, whisk together the milk, butte, and vanilla extract. Then, pour over oats and fruit. Gently shimmy and shake the baking dish to help the milk mixture go throughout the oats.
Bake oatmeal for 35 to 40 minutes or until the top is golden brown and the milk mixture has set.

Ok so you may have seen this recipe floating around the Pinterest world, but if you’ve never tried it you are missing out. I am slightly obsessed with this dish, it’s by far my most requested treat when party time comes around. It’s super simple to make, looks great on a plate, and is totally Gluten Free.
- Freshly Grated Parmesan Cheese (The good kind, not the powdery stuff)
- Cooked Chicken (shredded or chopped)
- Chopped Lettuce (or you can use shredded coleslaw if you want some color)
- Caesar Dressing (Marzetti’s is the only Gluten Free option I’ve come across!)
- Parchment Paper, Mini Muffin pan, and a cookie sheet!
So my parents are in New Orleans right now.. I was so jealous that I decided to make a king cake to celebrate Fat Tuesday. (Although truth be told, it rained all day today which would have put quite the damper on the Mardi Gras celebrations.)
I used this amazing recipe from Barbara Bakes. The only thing I would watch out for is the cook time — I checked on mine after 20 minutes and all the cinnamon sugar ish came out of the bottom and created quite a crust that made it seem like the bottom of the cake was burnt. Outside of that delish cake that everyone in the office enjoyed.
