Have you heard of the 100 Happy Days campaign? It’s been flooding my social media feeds lately and when I went to the website I was really inspired by the site. I can’t believe over 70% weren’t able to complete what I thought inherently is a simple everyday fact of life. Apparently not! There are a lot of things over the past few months that have made me stressed and down in the dumps, but in general I feel like I have a pretty happy demeanor. I thought this would be a great challenge to help me keep my inner and outer emotions focused on the happy and positive things I have going on my life. That being said I’ve been trying to decide when to start this challenge for a few weeks now and while driving to work today it hit me, why wait let’s start today! Whilst sitting in the unending LA traffic a beat-up white truck drove past me with a huge Eagles sticker on the back of the car! Clearly I had to let them know about my Philly pride as well. After I starred them down and made sure they could see my Eagles licence plate holder we both played the “how do we express our shared Philadelphia Eagles love awkward hand signals” game. Regardless that in addition to the song “Happy” by Pharrell playing simultaneously put me in a happy mood to start my day. I’ll be chronicling my journey via instagram— which you can see to the right of this very column. Here is to 100 Happy Days (which also happens to end just three days after my 30th birthday AHHH)
Ok so you may have seen this recipe floating around the Pinterest world, but if you’ve never tried it you are missing out. I am slightly obsessed with this dish, it’s by far my most requested treat when party time comes around. It’s super simple to make, looks great on a plate, and is totally Gluten Free.
- Freshly Grated Parmesan Cheese (The good kind, not the powdery stuff)
- Cooked Chicken (shredded or chopped)
- Chopped Lettuce (or you can use shredded coleslaw if you want some color)
- Caesar Dressing (Marzetti’s is the only Gluten Free option I’ve come across!)
- Parchment Paper, Mini Muffin pan, and a cookie sheet!

So my parents are in New Orleans right now.. I was so jealous that I decided to make a king cake to celebrate Fat Tuesday. (Although truth be told, it rained all day today which would have put quite the damper on the Mardi Gras celebrations.)
I used this amazing recipe from Barbara Bakes. The only thing I would watch out for is the cook time — I checked on mine after 20 minutes and all the cinnamon sugar ish came out of the bottom and created quite a crust that made it seem like the bottom of the cake was burnt. Outside of that delish cake that everyone in the office enjoyed.
