Fruity Oatmeal Bake

photo 5Ok, this is one of my favorite breakfast recipes. I will make a good batch of this and cut it into slices to eat throughout the week. You can adjust this with whatever fruit you like, but here is the way I make mine. I took the original pinterest recipe and slightly adapted it.

Fruity Oatmeal Bake

  • 2 cups old fashioned rolled oats
  • 1/3 cup packed light brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon Cinnamon
  • 1/2 cup sliced almonds
  • 1/2 cup of strawberries (sliced)
  • 1/2 cup of raspberries (sliced)
  • 1/3 cup semi-sweet chocolate chips
  • 2 cups non fat milk
  • 3 tablespoons butter, melted
  • 2 teaspoons vanilla extract
  • 1 banana sliced

Heat oven to 375 degrees . Spray your baking dish generously with non-cook spray!

In a large bowl, mix together the oats, sugar, baking powder, cinnamon and half of the chocolate, raspberries, strawberries, and almonds. Add to baking dish.  Then arrange the remaining chocolate, raspberries, strawberries, and almonds  as well as the banana slices on the top.

In another large bowl, whisk together the milk, butte, and vanilla extract. Then, pour over oats and fruit. Gently shimmy and shake the baking dish to help the milk mixture go throughout the oats.

Bake oatmeal for 35 to 40 minutes or until the top is golden brown and the milk mixture has set.

Serve warm!
